Potato Cheddar Cheese Egg Bites

Ingredients

  • 4 Potatoes diced
  • 1/2 White Onion diced
  • 1 Tbsp. Olive Oil
  • 1/8 Tbsp. Paprika
  • 2 Tbsp. Pink Himalayan Salt
  • 2 Tbsp. Garlic Powder
  • 1 Tsp. Ground Black Pepper
  • 5 Eggs
  • 1 Cup Cottage Cheese
  • 1/2 Cup of Chives chopped
  • 1 Cup Cheddar Cheese grated

Instructions

  • Dice the potatoes fairly small and place into a separate mixing bowl.
  • Dice the onion small in size and place into the mixing bowl alongside the potatoes.
  • In the mixing bowl, add the olive oil (This one is from Brightland!) and paprika; then combine.
  • Put the potatoes and onions on a foiled baking sheet evenly and bake at 400 degrees for about 15 minutes.
  • In a blender, coming the eggs, cottage cheese, garlic powder, salt & pepper until smooth.
  • Grease a muffin tin with olive oil spray
  • Chop up the chives, and grate the cheddar cheese to topping.
  • When the potatoes are finished baking, remove them from the oven.
  • Spoon the roasted potatoes and onions into the bottom of the muffin tin.
  • Pour the egg mixture into the muffin tin, filling about 3/4 of the way from the top.
  • Top with the chopped chives and shredded cheddar cheese.
  • Bake at 350 degrees for about 18-20 minutes, or until golden brown!
