Dice the potatoes fairly small and place into a separate mixing bowl.
Dice the onion small in size and place into the mixing bowl alongside the potatoes.
In the mixing bowl, add the olive oil (This one is from Brightland!) and paprika; then combine. Put the potatoes and onions on a foiled baking sheet evenly and bake at 400 degrees for about 15 minutes.
In a blender, coming the eggs, cottage cheese, garlic powder, salt & pepper until smooth.
Grease a muffin tin with olive oil spray
Chop up the chives, and grate the cheddar cheese to topping.
When the potatoes are finished baking, remove them from the oven.
Spoon the roasted potatoes and onions into the bottom of the muffin tin.
Pour the egg mixture into the muffin tin, filling about 3/4 of the way from the top.
Top with the chopped chives and shredded cheddar cheese.
Bake at 350 degrees for about 18-20 minutes, or until golden brown!
