Fresh Strawberry Tart

Ingredients

Crust

  • 1 1/3 Cup flour⁠
  • 1/4 Cup sugar⁠
  • 1/2 Tsp. salt⁠
  • 10 Tbsp. butter melted⁠

Filling

  • 1/2 Cup heavy cream⁠
  • 2 Blocks of cream cheese softened⁠
  • 1/2 Cup sugar⁠
  • 1 Lemon zested & squeezed⁠
  • 1 Tsp. vanilla extract ⁠

Topping

  • Fresh strawberries⁠
  • 3 tbsp. strawberry preserves ⁠

Instructions

  • Pre-heat the oven to 350 degrees.⁠
  • Wash & slice the fresh strawberries.⁠
  • Combine the flour, sugar & salt in a large mixing bowl.⁠
  • Add the melted butter & combine until a dough is made.⁠
  • Spread the dough evenly into a baking pan, poke holes in the bottom with a fork. ⁠
  • Bake for 25-30 mins. until golden brown & let cool completely.⁠
  • Beat the heavy cream with a hand mixer until you see stiff peaks (5-7 mins.) ⁠
  • In a separate mixing bowl, add the cream cheese & sugar & combine with the hand mixer. ⁠
  • Zest & juice one lemon, add vanilla extract & combine. ⁠
  • Add the peaked heavy cream mixture to the cream cheese mixture & fold until combined. ⁠
  • Add the combined mixture to the cooled crust, then begin adding the fresh sliced strawberries. ⁠
  • Top with warmed strawberry preserves & enjoy! ⁠
