This colorful recipe is loaded with fresh veggies, black beans for protein and a kick of spice with jalapenos and red onions. Top it off with lime juice and creamy, salty feta cheese and this dish combines all the taste bud high notes we need.

Alternate version: Feel free to make it vegan and omit the feta or choose your spice level with the jalapenos.

Best enjoyed slightly chilled but don’t wait too long, it’s best served fresh. Top it on a tortilla chip or just jump right in!

Cowboy Caviar

Ingredients

  • 1 cup Black beans
  • 1 cup Red bell pepper
  • 1 cup Orange bell pepper
  • 1 cup Yellow bell pepper
  • 1 cup Green bell pepper
  • 1 cup Red onion
  • 2 Jalapeños
  • 1/2 cup Cilantro to taste
  • 1 cup Fresh Sweet Corn
  • 1 cup Black olives
  • 1 cup Feta cheese to taste

Dressing

  • Lime juice 3
  • ¼ cup white wine vinegar to taste
  • ½ cup olive oil to taste
  • 3 tbsp spicy honey to taste
  • Salt to taste
  • Pepper to taste

Instructions

  • Add all your fresh ingredients into a large bowl.
  • Then, add your desired dressing (ours was homemade) and combine.
  • Cowboy Caviar is great served alone, or with some organic corn tortilla chips!
