Coconut Lime Shrimp

Ingredients

  • Shrimp-peeled & deveined⁠
  • 2 Cups Basmati Rice⁠
  • 3 Tbsp Coconut Oil ⁠
  • 1 Cup Chopped Cilantro⁠
  • 2 Tbsp Butter⁠
  • 1 Clove Chopped Garlic⁠
  • 1 Tbsp Granulated Garlic⁠
  • 1 Tbsp Sea Salt⁠
  • 1 Tbsp Ground Black Pepper⁠
  • ⁠1 Can Coconut Milk⁠
  • 1 Tbsp Ginger⁠
  • ½ Lime⁠
  • ¼ Cup Green Onion⁠
  • 1 Tbsp Sriracha⁠
  • ⁠Top with more Cilantro Lime & Green Onion⁠

Instructions

  • Peel & devein your Shrimp
  • Heat cast iron skillet over medium heat
  • Begin cooking Basmati Rice
  • Pour Coconut Oil into skillet & spread
  • Add Shrimp to skillet & cook until both sides are pink (2-3 mins each side)
  • Chop up Cilantro finely
  • Add 2 tbsp of Butter
  • Add 1 clove of Garlic (chopped)
  • Season with 1 tbsp Granulated Garlic
  • Add 1 tbsp Sea Salt
  • Add 1 tbsp Ground Black Pepper
  • ~MIX~
  • Take Basmati Rice off & let cook off heat for 10 mins
  • Add 1 can Coconut Milk to skillet over high heat
  • Add 1 tbsp Ginger
  • Add ½ Lime Juice to skillet
  • Add ¼ Cup Green Onion
  • Add 1 Tbsp Sriracha
  • Top with more Cilantro, Lime & Green Onion
