Instructions
In a large mixing bowl, whisk the eggs, then gradually add the oat milk, salt & pepper.
In a cast iron, melt the butter & add the cherry tomatoes, scallions & red bell pepper. Cook until vegetables have softened.
Add the egg mixture to the vegetables, combine.
Sprinkle additional cheese to taste.
Bake at 425 degrees for 10-12 minutes or until the top is lightly golden.
