Sweet Red Pepper & Cheese Frittata

Looking for an easy brunch or lunch idea? This is the perfect go to for a lazy weekend breakfast or addition to any brunch menu for family or guests at home. The beauty in this recipe is you can mix in any combo of ingredients or veggies you have in the fridge. This version with red bell pepper and smoked gouda gives it a mildly sweet and creamy smoky flavor. We also love using a cast iron so it can go from stove to oven seamlessly. Make sure to properly season and coat your pan so you have the option to flip the frittata onto a serving board (or you can serve it directly from the cast iron).

  • 1 Cast Iron

Ingredients

  • 8 Eggs
  • Cup Oat milk
  • Cup Cherry Tomatoes diced
  • Cup Red Bell Pepper diced
  • Cup Scallions diced
  • Cup Smoked Gouda Cheese
  • Cup Colby Jack Cheese
  • 1 Tbsp. Butter
  • Salt & Pepper to taste

Instructions

  • In a large mixing bowl, whisk the eggs, then gradually add the oat milk, salt & pepper.
  • In a cast iron, melt the butter & add the cherry tomatoes, scallions & red bell pepper. Cook until vegetables have softened.
  • Add the egg mixture to the vegetables, combine.
  • Sprinkle additional cheese to taste.
  • Bake at 425 degrees for 10-12 minutes or until the top is lightly golden.
