Homemade Pepper & Cheese Frittata

  • 1 Cast Iron

Ingredients

  • 8 Eggs
  • Cup Oat milk
  • Cup Cherry Tomatoes diced
  • Cup Red Bell Pepper diced
  • Cup Scallions diced
  • Cup Smoked Gouda Cheese
  • Cup Colby Jack Cheese
  • 1 Tbsp. Butter
  • Salt & Pepper to taste

Instructions

  • In a large mixing bowl, whisk the eggs, then gradually add the oat milk, salt & pepper.
  • In a cast iron, melt the butter & add the cherry tomatoes, scallions & red bell pepper. Cook until vegetables have softened.
  • Add the egg mixture to the vegetables, combine.
  • Sprinkle additional cheese to taste.
  • Bake at 425 degrees for 10-12 minutes or until the top is lightly golden.
