Homemade Pepper & Cheese Frittata

Ingredients
- 8 Eggs
- ⅓ Cup Oat milk
- ⅓ Cup Cherry Tomatoes diced
- ⅓ Cup Red Bell Pepper diced
- ⅓ Cup Scallions diced
- ⅓ Cup Smoked Gouda Cheese
- ⅓ Cup Colby Jack Cheese
- 1 Tbsp. Butter
- Salt & Pepper to taste
Instructions
- In a large mixing bowl, whisk the eggs, then gradually add the oat milk, salt & pepper.
- In a cast iron, melt the butter & add the cherry tomatoes, scallions & red bell pepper. Cook until vegetables have softened.
- Add the egg mixture to the vegetables, combine.
- Sprinkle additional cheese to taste.
- Bake at 425 degrees for 10-12 minutes or until the top is lightly golden.
