Ground Lamb Stuffed Bell Peppers

This is one of those recipes that you don’t really know how good it is until you try it! Trust me, I’ll make you a believer in this one. The tangy, slightly sweet sauce paired with your meat of choice and the creamy cheese melted on top with a just right textured pepper is delish! For this meal, I chose ground lamb to step up the flavor combo but ground turkey or vegan crumble would work too. Ground Lamb Stuffed Bell Peppers

Servings 3 people

Ingredients

  • 3 Bell Peppers
  • 2 Tbsp. Extra Virgin Olive Oil
  • 1 lb. of Ground Lamb
  • ½ White Onion
  • 1 Can of Tomato Sauce
  • ½ Cup Mozzarella Cheese
  • 1 Cup of Brown Rice
  • 1 Tsp. Salt
  • 1 Tsp. Garlic Powder
  • 1 Tsp. Turmeric
  • 1 Tsp. Cumin
  • 1 Tsp. Ground Pepper
  • 1 Garlic Clove
  • 2 Tsp. Maple Syrup
  • 1 Tsp. Dried Basil

Instructions

  • Start by cutting the tops of the bell peppers off, and scoop out the core.
  • Place the peppers in boiling water to soften, boil for 2 minutes.
  • Add the extra virgin olive oil to a cast iron skillet, then add the ground lamb to the skillet.
  • Remove the bell peppers from the boiling water and place into a baking dish.
  • Cook until the ground lamb has browned.
  • Begin to dice the white onion finely. Add the onion to the cast iron skillet.
  • Turn down the heat under the skillet & let the meat and onion mixture simmer. Make sure to drain the excess juice!
  • Begin to season the meat mixture with the following: salt, garlic powder, turmeric, cumin, and ground pepper.
  • Pound the garlic clove to open, then chop finely. Add to the cast iron skillet.
  • Begin to add the brown rice, tomato sauce, and maple syrup to the skillet and combine.
  • Turn the heat down to low & let everything simmer.
  • Once the mixture is cooked fully, begin to fill the hollowed out peppers.
  • Top the baking dish with aluminum foil & bake at 350 degrees for 10 minutes, then uncover the bell peppers & cook for another 10 minutes.
  • Once the bell peppers have been cooked fully, top with mozzarella cheese & basil.
