Sweet, nutty, and secretly full of greens, this Zucchini Bread is a cool mom-approved way to get everyone eating their veggies, without skimping on flavor!

Zucchini Bread
Ingredients
- 2 Cups All Purpose Flour
- 1 Cup Granulated Sugar
- ½ Cup Brown Sugar
- 2 T sp. Baking Soda
- 1 Tbsp Cinnamon
- 1 Tsp. Salt
- 3 Large Eggs
- 2 Cups grated zucchini 2 small cucumbers
- ¾ Cup Extra Virgin Olive Oil
- 1 Tbsp Vanilla Extract
- 1 Cup Chopped Walnuts
- For the walnut topping:
- Chopped Walnuts to taste
- Brown Sugar to taste
- Drizzle of Hazelnut Spread (optional)
Instructions
- Preheat the oven to 350 degrees and make sure your bread loaf pan is greased completely.
- In a large bowl, combine the following ingredients: flour, sugar, baking soda, cinnamon, and salt. Whisk together until completely combined.
- In a medium bowl, whisk the eggs until combined, then add the grated zucchini, evoo, and vanilla; mixing to combine.
- Add the wet ingredients into the dry ingredients, and gently fold together until combined completely.
- Add the zucchini bread mixture into the bread loaf pan, then sprinkle brown sugar and chopped walnuts on top to create a crunchy topping.
- Bake for about 50 minutes total, checking with a toothpick at about 40 minutes.
- Remove the zucchini bread from the oven once fully baked, plate and serve.
