Zucchini Bread

Sweet, nutty, and secretly full of greens, this Zucchini Bread is a cool mom-approved way to get everyone eating their veggies, without skimping on flavor!

Zucchini Bread

Ingredients

  • 2 Cups All Purpose Flour
  • 1 Cup Granulated Sugar
  • ½ Cup Brown Sugar
  • 2 T sp. Baking Soda
  • 1 Tbsp Cinnamon
  • 1 Tsp. Salt
  • 3 Large Eggs
  • 2 Cups grated zucchini 2 small cucumbers
  • ¾ Cup Extra Virgin Olive Oil
  • 1 Tbsp Vanilla Extract
  • 1 Cup Chopped Walnuts
  • For the walnut topping:
  • Chopped Walnuts to taste
  • Brown Sugar to taste
  • Drizzle of Hazelnut Spread (optional)

Instructions

  • Preheat the oven to 350 degrees and make sure your bread loaf pan is greased completely.
  • In a large bowl, combine the following ingredients: flour, sugar, baking soda, cinnamon, and salt. Whisk together until completely combined.
  • In a medium bowl, whisk the eggs until combined, then add the grated zucchini, evoo, and vanilla; mixing to combine.
  • Add the wet ingredients into the dry ingredients, and gently fold together until combined completely.
  • Add the zucchini bread mixture into the bread loaf pan, then sprinkle brown sugar and chopped walnuts on top to create a crunchy topping.
  • Bake for about 50 minutes total, checking with a toothpick at about 40 minutes.
  • Remove the zucchini bread from the oven once fully baked, plate and serve.
  • Enjoy!
