Preheat the oven to 350 degrees and make sure your bread loaf pan is greased completely.
In a large bowl, combine the following ingredients: flour, sugar, baking soda, cinnamon, and salt. Whisk together until completely combined.
In a medium bowl, whisk the eggs until combined, then add the grated zucchini, evoo, and vanilla; mixing to combine.
Add the wet ingredients into the dry ingredients, and gently fold together until combined completely.
Add the zucchini bread mixture into the bread loaf pan, then sprinkle brown sugar and chopped walnuts on top to create a crunchy topping.
Bake for about 50 minutes total, checking with a toothpick at about 40 minutes.
Remove the zucchini bread from the oven once fully baked, plate and serve.
