Sweet Potato Casserole

Ingredients

  • 6 Medium Sweet Potatoes or 4 Large Sweet Potatoes
  • ½ Stick Melted Butter
  • 1 Tsp. Vanilla Extract
  • 1 Tsp. Salt
  • ½ Cup Evaporated Milk
  • 2 Tbsp. Cinnamon & Pumpkin Spice Mix
  • 2 Eggs whisked
  • Marshmallows

Topping:

  • 1 Cup Brown Sugar
  • ½ Cup Flour
  • ¼ Cup Melted Butter
  • 1 Cup Pecans

Instructions

  • Boil 6 medium sized sweet potatoes, until the skin is soft enough to peel off.
  • Slice & peel the skin off the sweet potatoes and place into a large bowl.
  • Mash the potatoes & begin to add the following ingredients: melted butter, vanilla, salt, evaporated milk, eggs, cinnamon & pumpkin spice mix.
  • Use a hand mixer to combine the ingredients.
  • Butter your baking dish & add the mixture evenly.
  • Topping: In a medium sized bowl, combine the following ingredients: brown sugar, flour, butter, pecans.
  • Spread the topping evenly over the sweet potato mixture.
  • Spread the marshmallows evenly over the sweet potato mixture.
  • Cook in the oven at 350 degrees for 35 minutes, or until browned.
