Bring a pot of salted water to a boil, cook the macaroni until it’s al dente. drain and set aside.
While the macaroni cooks, melt the butter in a cast iron skillet to coat.
Add the flour to the melted butter, whisk together over medium heat until combined.
As the flour mixture starts to bubble, whisk in the milk until thickened, stirring regularly.
Add the salt and pepper, then begin adding in the shredded cheddar and monterey jack cheese. (keep about a half cup for topping!)
Remove the cast iron skillet from the heat and add the al dente macaroni into the cheese mixture. fold in until combined completely.
Top the macaroni mixture with remaining grated cheese, and bread crumbs. Place under a broiler until golden brown.
Let cool, top with fresh parsley and enjoy!
