Coat cast iron pot with EVOO, add the turkey, add salt to taste and brown the meat.
When the turkey has browned, add in the peppers, red onion, and chopped garlic, stir until combined.
Add the following seasoning to the turkey and veggie mixture: chili powder, cumin, garlic granules, onion powder, paprika and parsley. Stir until combined.
Add the fire roasted tomatoes, black beans, pinto beans, tomato sauce, and pumpkin puree, stir until combined.
Let cook and bring to a boil, then let sit on a low heat for about 30 minutes.
Top with fresh parsley, green onion, and cheddar cheese.
