In a large pot, bring water to a boil, don't forget to salt your pasta water!
Dice up the red onion, garlic, shallot, and fresh basil.
Add butter and ghee to a heated saucepan, then add the onion, garlic & shallot and let cook until translucent.
Add the tomato paste & calabrian chili sauce to the pan, combine fully.
Add the vodka to the saucepan and let cook for 1 minute to cook out the alcohol.
Slowly add the heavy cream, whisking to combine.
Once water is at a boil, add your pasta of choice to the pot and cook fully.
Shred the parmesan cheese & add to the saucepan, add the fresh basil too & combine. If sauce is too thick, add some pasta water.
Add a pinch of salt to the saucepan.
Once the pasta is fully cooked, add to your saucepan & stir completely.
Top with extra parmesan & enjoy!
