Asparagus Salad with Lemon & Pecorino Cheese

Ingredients

  • 1 Bunch Raw asparagus thinly chopped
  • Juice of 1 lemon
  • Zest of ½ lemon
  • 2 Tbsp Extra Virgin olive oil
  • ¼ Cup Pecorino cheese grated finely
  • Flaky sea salt to taste
  • Black pepper to taste
  • Red Pepper Flakes to taste

Instructions

  • Prep the asparagus: slice down the middle, then thinly chop into fourths.
  • Toss with lemon juice, zest, extra virgin olive oil, pecorino cheese, salt & pepper.
  • Plate and top with more lemon zest, and shaved pecorino cheese.
  • Enjoy!
