Asparagus Salad with Lemon & Pecorino Cheese

Ingredients

Bunch Raw asparagus
thinly chopped
Juice of 1 lemon
Zest of ½ lemon

Extra Virgin olive oil
¼
Cup
Pecorino cheese
grated finely
Flaky sea salt
to taste
Black pepper
to taste
Red Pepper Flakes
to taste
Instructions
Prep the asparagus: slice down the middle, then thinly chop into fourths.
Toss with lemon juice, zest, extra virgin olive oil, pecorino cheese, salt & pepper.
Plate and top with more lemon zest, and shaved pecorino cheese.
Enjoy!
