Fill a large pot with water & bring it to a boil.
While you wait for the water to boil, begin preparing the sauce.
For the sauce, begin by dicing the garlic cloves & grating fresh ginger into a mixing bowl.
Add the following ingredients & mix until fully combined: garlic, ginger, tahini, rice vinegar, soy sauce, garlic powder, honey, chili paste & water.
Return to the boiling water & add salt. Then add the noodles & olive oil to the pot.
Boil the noodles for 15 minutes.
Begin chopping the broccoli into small florets.
Blanch the broccoli for 2-3 minutes with the same pasta water after the noodles are fully cooked.
Add the cooked noodles into the tahini mixture & combine.
Strain the broccoli & add salt, pepper & red pepper flakes to taste.
Top with sesame oil & sesame seeds.
