In a blender, combine the following ingredients: cottage cheese, old fashioned oats, eggs, and salt. (Optional to add vanilla extract for a hint of sweetness).
Blend until the mixture is smoothed completely.
Coat a non stick skillet with butter over medium heat.
Pour the pancake mixture into the heated skillet. Cook until the pancakes are set around the edges and are golden-brown on the bottom, about 2 to 3 minutes.
Remove the pancakes from the skillet, plate, top with melted butter, maple syrup, and fresh strawberries.
