Skillet Baked Macaroni and Cheese
Ingredients
- 1 lb Dry Macaroni pasta
- 6 Tbsp Butter
- 4 Cups Milk
- 1 ½ Tsp Salt
- 1 Tsp Black Pepper
- 2 Cups Cheddar cheese shredded
- 2 Cups Monterey jack cheese shredded
- Bread crumbs to taste (for topping)
- Fresh parsley to taste (for topping)
Instructions
- Bring a pot of salted water to a boil, cook the macaroni until it’s al dente. drain and set aside.
- While the macaroni cooks, melt the butter in a cast iron skillet to coat.
- Add the flour to the melted butter, whisk together over medium heat until combined.
- As the flour mixture starts to bubble, whisk in the milk until thickened, stirring regularly.
- Add the salt and pepper, then begin adding in the shredded cheddar and monterey jack cheese. (keep about a half cup for topping!)
- Remove the cast iron skillet from the heat and add the al dente macaroni into the cheese mixture. fold in until combined completely.
- Top the macaroni mixture with remaining grated cheese, and bread crumbs. Place under a broiler until golden brown.
- Let cool, top with fresh parsley and enjoy!
