Pumpkin Chili
Ingredients
- 1 lb Turkey Meat grounded
- 1 tbsp Extra Virgin Olive oil to coat pot
- 1 small Red Onion diced
- 3 Cloves Fresh Garlic chopped or minced
- 2 tsps Sea Salt or to taste
- 3 Lunchbox Peppers diced
- 2 tbsps Chili Powder
- 2 tbsps Garlic Granulated
- 2 tsps Cumin
- 2 tsps Onion Powder
- 1 tbsp Paprika
- 1 Can of Fire Roasted Tomatoes
- 1 Can of Black Beans
- 1 Can of Pinto Beans
- 1 Can of Tomato Sauce
- 1 Can of Pumpkin Puree
- Fresh Parsley to taste (for garnish)
- Fresh Green Onion to taste (for garnish)
- Shredded Cheddar Cheese to taste (for garnish)
Instructions
- Coat cast iron pot with EVOO, add the turkey, add salt to taste and brown the meat.
- When the turkey has browned, add in the peppers, red onion, and chopped garlic, stir until combined.
- Add the following seasoning to the turkey and veggie mixture: chili powder, cumin, garlic granules, onion powder, paprika and parsley. Stir until combined.
- Add the fire roasted tomatoes, black beans, pinto beans, tomato sauce, and pumpkin puree, stir until combined.
- Let cook and bring to a boil, then let sit on a low heat for about 30 minutes.
- Top with fresh parsley, green onion, and cheddar cheese.
