Potato Cheddar Cheese Egg Bites
Ingredients
- 4 Potatoes diced
- 1/2 White Onion diced
- 1 Tbsp. Olive Oil
- 1/8 Tbsp. Paprika
- 2 Tbsp. Pink Himalayan Salt
- 2 Tbsp. Garlic Powder
- 1 Tsp. Ground Black Pepper
- 5 Eggs
- 1 Cup Cottage Cheese
- 1/2 Cup of Chives chopped
- 1 Cup Cheddar Cheese grated
Instructions
- Dice the potatoes fairly small and place into a separate mixing bowl.
- Dice the onion small in size and place into the mixing bowl alongside the potatoes.
- In the mixing bowl, add the olive oil (This one is from Brightland!) and paprika; then combine.
- Put the potatoes and onions on a foiled baking sheet evenly and bake at 400 degrees for about 15 minutes.
- In a blender, coming the eggs, cottage cheese, garlic powder, salt & pepper until smooth.
- Grease a muffin tin with olive oil spray
- Chop up the chives, and grate the cheddar cheese to topping.
- When the potatoes are finished baking, remove them from the oven.
- Spoon the roasted potatoes and onions into the bottom of the muffin tin.
- Pour the egg mixture into the muffin tin, filling about 3/4 of the way from the top.
- Top with the chopped chives and shredded cheddar cheese.
- Bake at 350 degrees for about 18-20 minutes, or until golden brown!
