Asparagus Salad with Lemon & Pecorino Cheese
Ingredients
- 1 Bunch Raw asparagus thinly chopped
- Juice of 1 lemon
- Zest of ½ lemon
- 2 Tbsp Extra Virgin olive oil
- ¼ Cup Pecorino cheese grated finely
- Flaky sea salt to taste
- Black pepper to taste
- Red Pepper Flakes to taste
Instructions
- Prep the asparagus: slice down the middle, then thinly chop into fourths.
- Toss with lemon juice, zest, extra virgin olive oil, pecorino cheese, salt & pepper.
- Plate and top with more lemon zest, and shaved pecorino cheese.
