Cast Iron Pumpkin Bread With Pecan Topping

Cast Iron Pumpkin Bread & Brown Sugar Pecan Topping

Ingredients

  • 1/4 Cup Water
  • 2 Cups Flour
  • 1 1/2 Tsp Pumpkin pie spice
  • 1 Tsp Cinnamon
  • 1/4 Tsp Baking powder
  • 1 Tsp Baking soda
  • 1/4 Tsp Salt
  • 1 Cup Sugar
  • 1/2 Cup Brown sugar
  • 1/2 Tsp Nutmeg
  • 1/4 Tsp Ginger
  • 3/4 Cup Vanilla bean yogurt
  • 1 1/2 Tsp Vanilla extract
  • 1/3 Cup Butter
  • 1 Can Pumpkin
  • 3 Eggs

For the Brown Sugar Pecan Topping

  • Brown sugar to taste
  • Pecans to taste
  • Butter to taste, melted

For the Icing

  • 1 1/2 Cup Powdered sugar
  • 2 Tbsp Water

Instructions

  • Preheat the oven to 350 degrees.
  • In a medium sized bowl, combine the following ingredients with a mixer until fluffy: butter granulated sugar, brown sugar.
  • Add the eggs, one at a time and combining well after each addition.
  • Add the pumpkin puree, yogurt, to the mixture and combine.
  • Add in the vanilla extract, combine and set aside.
  • In a separate mixing bowl, combine the dry ingredients: flour, cinnamon, pumpkin spice, baking soda, baking powder, salt, ginger, and nutmeg.
  • Slowly pour the dry ingredients into the wet ingredients and combine until smooth.
  • Coat a cast iron skillet with butter before adding the pumpkin bread mixture in to bake.
  • Bake for about 45-55 minutes, until golden brown or until a toothpick comes out clean!
  • While the pumpkin bread is baking, create the brown sugar pecan topping and icing to top.

For the Pecan Topping

  • Combine melted butter, brown sugar and chopped pecans in a bowl. Add topping to the pumpkin bread about 5 minutes before it’s done in the oven.

For the Icing

  • Combine powdered sugar and water in a bowl. Drizzle over the pumpkin bread when it’s ready to serve!
