Carbone’s Spicy Pasta Recipe is here to turn your meal into a flavor fiesta! Spicy Calabrian chili, creamy Parmesan, and a splash of vodka create a deliciously balanced dish that’s sure to make your taste buds dance!
Carbone’s Spicy Pasta
Ingredients
- 1 Bag of Cascatelli pasta (from Trader Joes)
- ½ Red Onion diced
- 1 Whole Clove of garlic minced
- ½ Shallot
- 3 Tbsp Fresh basil to taste
- 1 Tbsp Butter
- 1 Tbsp Ghee
- 1 Can of Tomato paste 6oz
- ½ Cup Calabrian chili spicy pasta sauce from Trader Joes
- 1/4 Cup Vodka
- 1 Cup Heavy cream
- 1/4 Cup Parmesan cheese shredded (+ more for topping)
- 1 Tbsp Maple syrup
- Salt to taste
Instructions
- In a large pot, bring water to a boil, don’t forget to salt your pasta water!
- Dice up the red onion, garlic, shallot, and fresh basil.
- Add butter and ghee to a heated saucepan, then add the onion, garlic & shallot and let cook until translucent.
- Add the tomato paste & calabrian chili sauce to the pan, combine fully.
- Add the vodka to the saucepan and let cook for 1 minute to cook out the alcohol.
- Slowly add the heavy cream, whisking to combine.
- Once water is at a boil, add your pasta of choice to the pot and cook fully.
- Shred the parmesan cheese & add to the saucepan, add the fresh basil too & combine. If sauce is too thick, add some pasta water.
- Add a pinch of salt to the saucepan.
- Once the pasta is fully cooked, add to your saucepan & stir completely.
- Top with extra parmesan & enjoy!
