Whole Roasted Chili-Lime Cauliflower
Ingredients
- 1 Head of cauliflower
- 1/4 Cup ghee or softened butter
- 3 Cloves of garlic minced
- 1 Tbsp garlic powder
- 1/2 Tbsp paprika
- 1 Tbsp chili powder
- 1 Heaping pinch of salt
- 1-2 Heaping pinches of @tajinusa or chili lime seasoning
- Zest + juice of 1 lime
- Cotija cheese to taste
- Top with fresh cilantro to taste
- Drizzle of olive oil
Instructions
- Cut off & discard the cauliflower’s outer leaves + stock, place the cauliflower head in cast iron pot or oven safe pot
- Combine the following ingredients for the cauliflower rub: ghee, minced garlic, spices, lime zest + juice
- Cover the cauliflower in the spiced rub
- Bake at 425 degrees until tender (about 30 mins)
- Pour remaining spice rub over the cauliflower from cast iron pot
- Top with cotija cheese + cilantro
- Enjoy!
