We are keeping it going with our Holiday sides! Time to eat some good food, comfort food, make you mad you don’t live with your mama food! When you normally think of the holidays, you instantly think of turkeys and all the sides!
We will be sharing our all time favorite sides recipes with you. These are your comfort loving, lick your finger, there better be left overs – type of recipes! This Sweet Potato Casserole recipe has been perfected over time! It’s creamy sweet taste and crunch of the pecans just makes us so happy! Sweet Potato Casserole
Ingredients
- 6 Medium Sweet Potatoes or 4 Large Sweet Potatoes
- ½ Stick Melted Butter
- 1 Tsp. Vanilla Extract
- 1 Tsp. Salt
- ½ Cup Evaporated Milk
- 2 Tbsp. Cinnamon & Pumpkin Spice Mix
- 2 Eggs whisked
- Marshmallows
Topping:
- 1 Cup Brown Sugar
- ½ Cup Flour
- ¼ Cup Melted Butter
- 1 Cup Pecans
Instructions
- Boil 6 medium sized sweet potatoes, until the skin is soft enough to peel off.
- Slice & peel the skin off the sweet potatoes and place into a large bowl.
- Mash the potatoes & begin to add the following ingredients: melted butter, vanilla, salt, evaporated milk, eggs, cinnamon & pumpkin spice mix.
- Use a hand mixer to combine the ingredients.
- Butter your baking dish & add the mixture evenly.
- Topping: In a medium sized bowl, combine the following ingredients: brown sugar, flour, butter, pecans.
- Spread the topping evenly over the sweet potato mixture.
- Spread the marshmallows evenly over the sweet potato mixture.
- Cook in the oven at 350 degrees for 35 minutes, or until browned.
