Simple Marinated Tomatoes with Creamy Burrata

Ingredients

  • 2 Cups Cherry & Red Cocktail Tomatoes Halved
  • 1 Burrata Cheese Ball
  • 1/4 Cup Red Onion Thinly sliced
  • Freshly Baked French Bread For serving

For the Marinade

  • 1/2 Cup Extra Virgin Avocado Oil
  • 1 Tbsp Balsamic Vinegar
  • 1 Tbsp Champagne Vinegar
  • 1 Tbsp Honey
  • 2 Cloves of Fresh Garlic Minced
  • 1/4 Cup Fresh Basil chopped
  • 1 Tbsp Fresh Thyme chopped
  • Salt to taste
  • Pepper to taste
  • Red Pepper Flakes to taste

Instructions

  • Preheat the oven to 300 degrees, place the french baguette in the oven until crisp & golden brown, about 5 minutes.
  • Prep your ingredients by chopping the following: Fresh basil, thyme, and tomatoes.
  • Begin making the marinade for the tomatoes by combining the following ingredients: Balsamic vinegar, champagne vinegar, honey, avocado oil, salt, pepper, red pepper flakes. Whisk to combine completely.
  • Mince the garlic into the marinade mixture, then add the freshly chopped herbs, whisking to combine completely.
  • Add the halved tomatoes into the marinade, and let set for at least 30mins before plating.
  • Remove the french baguette from the oven, slice into bite sized pieces.
  • Plate the marinated tomatoes, top with red onion, burrata cheese, drizzle the marinated over, sprinkle some fresh herbs, and add the baguette slices on the side.
