5 Minute High-Protein Pancakes

Ingredients

  • 1/2 Cup Old Fashioned Oats
  • 1/2 Cup Cottage Cheese
  • 2 Large Eggs
  • 1/8 Tsp Salt
  • Dash of Vanilla Extract Optional for sweetness
  • Melted Butter to taste (Topping)
  • Maple Syrup to taste (Topping)
  • Strawberries to taste (Topping)

Instructions

  • In a blender, combine the following ingredients: cottage cheese, old fashioned oats, eggs, and salt. (Optional to add vanilla extract for a hint of sweetness).
  • Blend until the mixture is smoothed completely.
  • Coat a non stick skillet with butter over medium heat.
  • Pour the pancake mixture into the heated skillet. Cook until the pancakes are set around the edges and are golden-brown on the bottom, about 2 to 3 minutes.
  • Remove the pancakes from the skillet, plate, top with melted butter, maple syrup, and fresh strawberries.
