Sunday Morning Pancakes
Quick and easy recipe for homemade pancakes perfect for any weekend (or weekday) morning!
Servings 4 people
Ingredients
- 2 cups all-purpose flour
- 2 tsps baking powder
- 1 tsp sea salt
- 2 tbsps cane sugar
- 1 tsp vanilla extract
- 2 organic large eggs
- 2 cups oat milk
- 1 tbsp melted coconut oil
- 4 tbsps grass fed melted butter

Mix all ingredients in a bowl. Add more milk, for thinner pancakes.
Heat a large skillet, preferably cast iron, nonstick or a griddle over medium heat. Add about 1 tsp of oil to pan.
Use ladle to spoon batter onto skillet. You should be able to fit 2-3 spoonfuls in skillet.
When pancake surface bubbles (usually 60-90 seconds), flip pancake using a thin wide spatula. Cook other side until evenly browned (usually 60 seconds).
Continue adding oil and batter until all pancakes are done.
Heat oven to 200 degrees to keep pancakes warm until ready to eat.
