Hot Honey Garlic Chicken

Ingredients

  • 4 Chicken thighs
  • 4 Sweet Potatoes diced
  • 4 Garlic cloves minced
  • 1 White onion diced
  • 2 Tbsp Butter
  • Salt to taste
  • Ground Black Pepper to taste
  • 1 Tbsp Olive oil
  • 1/4 Cup honey
  • 1/4 Cup Soy sauce
  • 1 Tbsp White vinegar
  • Fresh Parsley for garnish

Instructions

  • Preheat the oven to 400 degrees.
  • Prep time: Dice up the sweet potatoes, onion, and mince the fresh garlic.
  • Season the chicken thighs with salt and pepper on both sides.
  • Heat 1 tbsp of butter and olive oil in the cast iron skillet, heat until butter is melted.
  • Add the chicken to the skillet and let sear on each side for about 3 minutes, until golden.
  • Once chicken is seared, remove from the skillet and set aside.
  • Add the sweet potatoes, onion to the skillet and saute until potatoes are softened. Remove from skillet and set aside.
  • In the same skillet, add in the remaining butter and fresh garlic, cook until fragrant.
  • Add the following ingredients to create the honey soy glaze: honey, soy sauce, vinegar, red pepper flakes. Let simmer on medium heat until thickened.
  • Add in the chicken, sweet potatoes, and veggies to the skillet and cover with the honey soy sauce.
  • Bake the honey soy chicken at 100 degrees for about 25 minutes (until potatoes are completely tender)
