Crispy Garlic Smash Potatoes
Ingredients
- 8 Yukon golden potatoes
- Fresh Parsley
- Fresh Garlic cloves
- Salt to taste
- Pepper to taste
- 4 Tbsp Butter
Instructions
- In a cast iron dutch oven, fill with water to boil the potatoes in. Add flaky salt to taste for boiling.
- Let the yukon potatoes boil for about 15-20 minutes.
- In a small cast iron skillet, add the butter and smashed garlic cloves. Place the skillet in the oven and let bake until fragrant. Once done cooking, smash the garlic cloves again, combining the mixture completely. Season with salt to taste.
- Chop up the fresh parsley for garnish and set aside.
- After the potatoes have boiled fully, remove from the dutch oven and place in an ice bath for about 2-3 minutes.
- In a separate well oiled cast iron skillet, place the cooked potatoes into the skillet and smash flat with a burger press. Let each side cook for about 2-3 minutes each. Season to taste with salt & pepper.
- Flip until each smash potato is golden brown, and drizzle the garlic butter over the top.
- Plate, garnish with fresh parsley and serve.
