Preheat the oven to 400 degrees.
Prep time: Dice up the sweet potatoes, onion, and mince the fresh garlic.
Season the chicken thighs with salt and pepper on both sides.
Heat 1 tbsp of butter and olive oil in the cast iron skillet, heat until butter is melted.
Add the chicken to the skillet and let sear on each side for about 3 minutes, until golden.
Once chicken is seared, remove from the skillet and set aside.
Add the sweet potatoes, onion to the skillet and saute until potatoes are softened. Remove from skillet and set aside.
In the same skillet, add in the remaining butter and fresh garlic, cook until fragrant.
Add the following ingredients to create the honey soy glaze: honey, soy sauce, vinegar, red pepper flakes. Let simmer on medium heat until thickened.
Add in the chicken, sweet potatoes, and veggies to the skillet and cover with the honey soy sauce.
Bake the honey soy chicken at 100 degrees for about 25 minutes (until potatoes are completely tender)
