It’s Friday! Yay! My favorite day of the week by far, isn’t it yours too? Well, we have eaten out a couple of times already this week for lunch so I decided to use some of our leftover veggies (before our Sunday Farmer’s Market run) and make some big ole’ salads. In the middle of my chopping session, my mom and a friend stopped by for an impromptu visit, so it instantly became a last minute lunch date! Whoot! Whoot! These are definitely the best kind of days!
Here’s my recipe for the Easiest Ultimate Kinda Cobb Salad:
Mixed Greens, chopped
Kale, massaged in olive oil for 2 mins and chopped
Heirloom tomatoes, diced
English Cucumbers, diced
Rainbow Radishes, sliced
Shredded Cheese, I love a mix of mild cheddar, monterey jack and mozzarella
Avocado, I made guacamole because I love it
Add your fave dressing, I love Goddess Dressing from Trader Joes or a simple Olive Oil Vinegar Mix
