Barley, Feta & Mint

barley,feta,mint Time….I never really knew what this word truly meant until I didn’t have it anymore.  That’s what they say, you never truly appreciate something until it’s gone!  I’m being a little overdramatic, but since my time is very limited, I love having quick go to food options like this one.  It’s super quick and easy to make, plus the fresh ingredients make it a healthy option for my crew.  What are your favorite healthy go to options?  Let me know in the comments below.

Recipe:

3/4 cup uncooked barley

1 (15-ounce) can chickpeas, rinsed and drained

1 cup chopped tomatoes

3-4 chopped cucumbers

1 cup crumbled feta

2 lemons, squeezed for juice

1/3 cup olive oil

1/4 cup chopped mint

salt, pepper and garlic powder, according to taste

Cook barley according to package instructions.  Let barley cool to room temperature, then add chickpeas, tomatoes, cucumbers, mint and feta.

In separate bowl, combine lemon juice, olive oil, garlic powder (I add it to everything), salt and pepper to taste.  Whisk together until well blended.  Pour over barley mixture and toss well.

Serve immediately or chilled.
